Scallion Dipping Sauce
Makes about ¾ cupMirin can be found in most supermarkets; if you cannot find it, substitute 2 tablespoons dry white wine mixed with 1 teaspoon sugar. For a milder sauce, omit the chili oil. Combine 1 minced scallion, ¼ cup soy sauce, 2 tablespoons rice vinegar, 2 tablespoons mirin, 2 tablespoons water, 1 teaspoon chili oil, and ½ teaspoon toasted sesame oil in bowl. (Sauce can be refrigerated for up to 8 hours; whisk to recombine before serving.)
